Cooking to me is an art and a science. You have to taste everything you produce and everything you put on the plate should be balanced both in flavour and texture. It isnt hard, think about what you are making, write a list of all the different flavours that go with it and pick out a few key ingredients to compliment your main component, when you've done that start to think about how you can create different textures with those flavours - remember theres more than one way to cook a potato, and each different method yields a sightly different texture! And finally ALWAYS ALWAYS get the best possible produce you can afford, which in turn will have the best flavour. If you remember these key basics your onto a winning dish before you even start cooking!!

Ok so the look; i know you're dieing to ask...
One day in 1994 Stacie turned on the radio and was mesmerised by a song that was being played, that song was Supersonic by Oasis and it changed Stacie's life.

Stacie began to follow Oasis whole heartedly; she didn't have much money being only 13 so she read as much as she could about them in the papers and on the internet. Stacie found out Noel was inspired by Paul Weller, having never heard of him Stacie again sought to find out everything she could about Paul and why Noel was so inspired by him. From Paul Weller Stacie picked up on the Jam, and from the Jam Stacie discovered Northern Soul music!

TA-DA its like the human form of play your cards right! Higher or lower than an ace! IT'S A MOD!!

From then on Stacie, who was by this time around 16 became heavily engrossed in the lifestyle, music, scooters, and of course hair styles of the 60's most importantly the mod movement!

One say Stacie, tired of Northern life moved to London, it was there she met James, her mod in shining armour (or shining accessories on his Lambretta) They were married within a year at a big Minster in Sunderland with vintage cars and scooters and a Wigan Casino themed reception! Stacie and James moved back to Sunderland where Stacie applied for MasterChef and the rest they say is history....

Stacie is now the proud owner of a vast record collection covering Northern Soul, RnB, Boogaloo and reggae, she rides a a 68 Lambretta Li series 3 as shown in the picture on the right and YES the hair is real -34 inches (at the last count) of boof thats frustratingly thick. Now we all know beehive's aren't mod, but in order to sport the 'Quant' cut Stacie knows she should have she would have to cut all of her hair off and we LOVE Stacie's hair so its staying!
